I have selected producers I respect for their choices and the dedication they put into working the vineyard 365 days a year. Most of them are farms that strive to avoid synthetic chemicals in the vineyard. They use indigenous yeasts and a limited amount of sulphur dioxide, without altering the physical-chemical parameters in the cellar. In this way, they express their personality.”
